Specialty Sous Chef – Indian Cuisine

At the Grand Hyatt Red Sea, we are seeking a highly skilled and passionate Specialty Sous Chef (Sr. Sous) – Indian Cuisine to join our culinary team. The ideal candidate will have extensive knowledge of regional Indian dishes, ingredients, spices, and modern presentation techniques. They will support the Chef de Cuisine and Executive Chef in menu development, kitchen operations, food quality, and team supervision.

Key Responsibilities:

  • In absence of Chef de Cuisine, lead daily operations, ensuring consistent quality and flavor.
  • Develop innovative, authentic Indian dishes while maintaining traditional standards.
  • Train, mentor, and supervise kitchen staff within the restaurant.
  • Oversee food preparation, cooking, and presentation according to hotel/restaurant standards.
  • Ensure adherence to hygiene, sanitation, and food safety regulations (HACCP standards).
  • Manage inventory, ordering of specialty ingredients, and cost control.
  • Collaborate on menu planning, seasonal specials, and promotional events.
  • Maintain high standards of cleanliness and organization in the kitchen.
  • Support executive leadership in maintaining smooth operations during service.

Qualifications & Requirements:

  • At least 2 years (in the same restaurant) of proven experience as a Sous Chef, specializing in Indian cuisine.
  • In-depth knowledge of North Indian, South Indian, and regional specialties.
  • Strong understanding of spices, tandoor techniques, curries, and modern Indian gastronomy.
  • Culinary degree or equivalent professional training preferred.
  • Excellent leadership, communication, and team-management skills.
  • Ability to work under pressure in a fast-paced environment.
